you need one big fish head, the one in the ad was about, two and half pounds
and a couple of oranges
and some pepper corns
and some mace quills
and the usual shit, and what comes to hand and comes to mind
know the trick with the head is to get it int o the pan with all the other
stuff and simmer it for just a few minutes, then hook it out and scoop out all
that meat in it's neck just behind it's brain and put it aside for later
put the rest of the fish back in the pan and boil like hell
